Bean Dishes from the Garden of Peppe Zullo


The Italian biodiversity of legumes is extraordinary, protecting it is an increasingly important task and putting it on the table, as well as a pleasure is a real agricultural act with great ethical and environmental implications.

One of the greatest representatives of the biodiversity of legumes is Peppe Zullo, patron and chef of the homonymous local ‘chiocciolato’ of Osterie d’Italia, which will prepare dishes based on legumes: sedanini pasta made of red lentils with eggplant and mint ragout and Fusilli made of organic chickpeas with puree of white hornbeam beans (Slow Food Presidium), Vernini tomatoes and borage. Paired with wines from the Damilano winery, Castiglione Falletto (Cn).
