The Carnikava lamprey (Ark of Taste) is a rare and fine fish, found only in the Latvian municipality of Carnikava, on the banks of the river Gauja. Ēriks Dreibants, chef at Riga’s 3 Pavaru Restorans, and Baiba Smilga, founder of the Straupe Earth Market, present this precious fish in twos ways, one traditional, one modern , both in combination with other typical Latvian products. In this workshop, the lamprey is offered alder wood-smoked and served with Latvian black bread; or in jelly with horseradish sauce, porcini mushrooms, and sour cream

Paired with the wines of Consorzio Franciacorta.
