Foraging for Beer

Before hops became one of the key ingredients in beer, brewers used to use all kinds of different herbs, flowers, barks and roots found around the brewery to flavor their beers.

Centuries later, the practice of incorporating wild plants into beer is becoming increasingly popular. With a selection of beers from Italy, Scotland, the United States and elsewhere in the world and accompanied by Andrea Pieroni, rector of the University of Gastronomic Sciences and internationally renowned ethnobotanist, we will discover the extraordinary botanical richness available and how foraging can be used to make incredible beers.
