Farm to Table in Abruzzo,

The cooking philosophy of Peppino Tinari, chef at the Villa Maiella restaurant in Guardiagrele, in the province of Chieti, is that of refined dishes that bring the best out of the ingredients of the Abruzzo tradition. Always on the lookout for local products, over the years Peppino has developed an unbelievable farm where he raises Abruzzo black pigs which transforms into prime quality charcuterie without the addition of nitrites and nitrates. Here he’ll stage a tasting not to be missed of salamis, pancettas and lardo, plus a dish made with pig offal.

Paired with  Chardonnay A Taj and la Barbera Goj della cantina Cascina Castlèt, Castiglione d’Asti (At).

This Taste Workshop has been designed exclusively for Slow Food members. The non-member cost includes the Slow Food membership card, which will be given to you during Terra Madre Salone del Gusto.
