With freshness and creativity, in fact, the chef will address issues dear to the event organized by Slow Food, such as respect for the products of the earth and the fight against food waste. interesting, moreover, his way of playing with pasta, the absolute protagonist of every course, from appetizer to dessert, in order to enhance its incredible versatility. Not just any pasta, however, but a Pasta di Gragnano PGI, bronze drawn, slowly dried at low temperature, highly digestible and tenacious in cooking, and above all 100% Italian, as it is produced exclusively from national durum wheat, which the historic Pastificio Di Martino has always chosen with pride.
