Prosciutto and Bubbles: Carlo Dall’Ava’s Hams Meet Contratto’s Alta Langa


For Terra Madre Salone del Gusto aficionados, the name Carlo Dall’Ava and his prosciuttificio Dok are an institution.

A regular presence at the event for over 20 years, his prosciutto crudo and other surprises from around Europe always inspire great enthusiasm. The latest innovation is the Banca del Prosciutto, established within the San Daniele factory, where legs of traditional pig breeds, many protected by Slow Food Presidia, rest and age. During the workshop you’ll be tasting specialties direct from the Banca, like Noire de Bigorre from the Pyrenees, De Guijuelo jamón ibérico de bellota, Mangalica-breed hundok, an Istrian prosciutto and of course a San Daniele ham. The cured meats will be paired with Alta Langa selections from Contratto.
