The Sicilian Volcano: Bonetta dell’Oglio – A matter of breeding

‘It’s important to start from tradition and respect biodiversity, to ask about where food comes from and the story behind a dish.’

So speaks Palermo-born chef and food activist Bonetta dell’Oglio, a world ambassador of Sicilian cuisine. In this workshop, she will tell us all there is to know about the Modicana cattle breed, promoted by a Slow Food Presidium. Extremely hardy with a characteristic red coat, the breed gets through the torrid Mediterranean summers by grazing free-range, prevalently on pasture. The meat is redder, tougher than that of other breeds and the fat is yellowish in color, but Bonetta’s cooking brings out all its extraordinary taste qualities.

What will be served: Sfilacci of pine and herb smoked meat  and Involtini paired with Cavadiserpe Terre Siciliane IGT 2016 and il Mandrarossa Bonera Terre Siciliane IGT 2017 of Cantine Settesoli, Menfi (Ag).
