Unusual Pairings, Noble Flavors: Raw-Milk Cheese and Fine Tea


Writer Fabienne Effertz, founder of the Fromage & Thé association, will be presenting an eclectic tasting, pairing four European cheeses with four Asian teas.

From Italy, we will try a hard cheese aged in chestnut leaves from Beppino Occelli and a gorgonzola selected by Giovanni Fiori of Guffanti, from Belgium, Presidium raw-milk Herve, and from France, Brie de Meaux with a bloomy rind. They will be matched with the teas Bai Hao Yin Zheng (white), Anxi Tieguanyin and Lapsang Souchong (black) from China and black Darjeeling from India.
